Carrot Salsa - Summer Recipe

Summer is on the peak and I cannot help but appreciate the freshness of the produce around us! On a lazy, hot afternoon I am always looking for recipes where I do not have to turn on the stove. It also needs to be filling. With mango, strawberry and corn salsa already on the table, I am adding to your list with my new recipe - CARROT SALSA!

Extremely mouthwatering salsa that makes for a great dip, taco filling, quesadilla filling, addition to you burrito bowl or just as a side salad to your meal!




Ingredients:

1 cup Shredded carrots

1-2 Tbsp finely chopped onions and tomatoes

1/2 cup cilantro

1 finely chopped green chilies (skip them if you cant do spicy)

Lemon, salt and pepper


Main:

  1. Mix everything in a bowl.

  2. Drizzle lemon and let it sit for 5-10 mins in the fridge for a cool, hydrating Salsa!
