Fresh Kale Cucumber Salad

I bet my carbs if anyone finds this salad boring. Look at those colors and each element giving a sense of its taste and texture. Salad to be me is an open playground where you can use endless creativity, play and have fun. And they rarely go wrong. Being a salad lover, I have tried so many different salads because of which I have learned some basics and must-have combinations. With a little bit of imagination, I try to make new recipes all the time. Technically there is no recipe that you have to follow, just take a bowl and start adding your elements and I am sure it will turn out good.


For me, three basic components are very important for a good salad - A crunchy part, a sweet (mildly and natural) part and a filling part. That is all actually, now you can add and replace these components and have a new salad every time. Walnuts, almonds, tortilla strips, pumpkin seeds, peanuts, etc go well for the crunchy part. I try to bring the sweetness from naturally sweet foods such as apples, dried cranberries, oranges, honey, etc. The most important is the filling component. If you do not feel full after your salad, probably you are going back to the kitchen in a hour and that does not solve the purpose! Tofu, cheese, paneer/cottage cheese, beans, potatoes, whole veggies, quinoa, pasta all give you a satiated effect (in right quantities). Ofcourse you need your greens!! Once you know what you are adding, take your choice of dressing and enjoy a delicious and nutritious meal.


For my salad I used:

Fresh Kale - chopped

Navel Oranges

Dried Cranberries

Crumbled feta cheese

Chopped Walnuts

Pumpkin seeds

Cucumbers


Dressing:

2 Tbsp sesame seed oil

1 tsp freshly minced garlic

2 tsp honey

1 tsp lemon/lime juice

salt and pepper

Combine them and set aside for 5-7 mins


In a bowl, add all the ingredients and the dressing and enjoy !
