Eggless Chocolate Bread

This is not a ‘chocolate bread’ story. This is a ‘failed lemon loaf’ story. Recently, I went in hibernation and so did my instagram (apologize for that). I spent some stressful days in the past weeks when it felt nothing was happening according to the plan (2020 duh!). I had taken time off to contemplate stand up and try again. I feel so happy today to be posting after 2 weeks. I may not be completely out of the waters but I can breathe now.


I remembered the time when my first attempt of baking a lemon loaf was a failure. It was all flaky, broke into pieces and tasted gluey. It may not be a big deal, but it breaks your heart. All the cooking lovers will know. The very next day, I had to bake another but this time corrected myself. I baked this amazing, crowd pleasing chocolate bread. It turned out great. I poured myself a cup of tea, took a slice of the bread and smiled. 💕It is okay to take time off and segregate from the world while you are absorbing the reality. If that is your coping mechanism, then be it. Important is, (after all the whining and thinking), you try again! And that’s what I will do always!


This is my ‘failed lemon loaf’ story, what is yours?



Here is my ‘try again’ Eggless Whole Wheat Chocolate Bread - inspired by @merry_tummy ‘s whole wheat chocolate bread !

Ingredients

1 cup whole wheat flour

1/2 cup brown sugar

1/2 cup plain yogurt

2 Tbsp cocoa powder

1 tsp vanilla essence

1 tsp baking soda

1/2 tsp baking powder

1/2 cup vegetable oil (or any oil you have)

3-4 Tbsp grounded walnuts

A pinch of salt


Method

Preheat the over at 350 F and grease the bread pan

In a bowl, sift the flour, baking soda, and baking powder

In a separate bowl, mix cocoa powder with 7-8 tsp hot water

Next, add sugar, yogurt and vanilla essence and mix until sugar dissolves.

Add the oil and mix well

Finally, mix the dry ingredients to with wet ingredients. Add a pinch of salt and mix. Do not over mix

Pour the batter in the baking pan and top some grounded walnuts on it

Bake for 25-30 min or until knife comes out clean.

Let it cool on tabletop before removing from the pan.
