Instant Semolina/Rava Idlis

It’s almost always that I crave fora dish and the required ingredients are not available in my pantry! And almost always Rava/soji/semolina comes to the rescue! Does that happen to you as well?


Long ago, mom gave me an idea of using Rava/Semolina for Dhoklas (traditional gujarati dish). Probably, with the same logic I tries these delicious idlis. Soaked Rava with the traditional south-Indian tempering and flavors is a modern recipe with traditional tastes!

Extremely mouthwatering, tasty and instant idlis!




Ingredients:

1 cup semolina/rava/soji

1/2 cup plain yogurt

2 green chilies finely chopped

1/2 inch ginger (paste or finely chopped)

1/2 cup carrots cut in juliennes

3-4 curry leaves

1 tsp each of mustard seeds, cumins seeds, chana dal, urad dal, baking soda/eno and asafoetida.


Preparation:

In a pan, heat 1 tsp olive oil

Add mustard seeds and curry leaves and let them crackle

Add the cumin seeds, urad dal, chana dal and asafetida

Add the green chilies, ginger and carrots

Cook for 4-5 mins

Add 1 cup semolina and roast it for about 8-9 mins or until aromatic

Take it off the flame

Add the semolina in a bowl and mix in the yogurt and salt (to taste)

Add water as needed to make it a thick idli batter

Let it soak for at least 15 mins


Steam:

After 15 mins, add fruit salt/eno/baking soda to the batter

Steam them in your idli maker for about 17-20 mins (keep checking)

Serve 🍽
