Moraiyo - Barnyard Millet Recipe

Moraiyo, also known as Samo, comes from Indian Millet grown in Northern India. It is gluten-free, high in dietary fibers and protein and low in carbohydrates. Basically, it has everything we are looking for in a healthy, low-carb meal. It is a famous ingredient in India for its use during fasts.
The grain size is slightly larger than Semolina and tastes like broken rice. Easily available in Indian stores, this recipe makes for a light, lazy dinner recipe that quick to make and tastes delicious. Did I mention it can be made Jain? Real easy, made in minutes and basic ingredients recipe below

Prep Time: 0 mins; Cook Time: 15 mins; Serves: 2
Ingredients:
1/2 cup Moraiyo/Samo flour/Barnyard Millet
4-5 cups of water
1 green chili - finely chopped
1-2 tsp cumin seeds
1/2 plain yogurt
Handful of peanuts
1-2 tsp red chili powder
2-3 cooking oil
Salt to taste
Method:
In a large pot, heat 2 cups of water and bring it to a boil
Add the 'moraiyo' and let is cook until soft
Add green chilies and salt at this stage
Check if they are cooked nicely. Should melt in the mouth
You may need to keep adding water because the flour will soak a lot of it
Once cooked, lower the flame
In a separate vessel, prepare the tempering
Heat 2-3 tsp oil, once hot add cumin seeds, peanuts and red chili powder
Immediately pour the tempering in the cooked moraiyo
Stir in the yogurt
Adjust salt and serve!
Tips:
Above is the jain recipe. For non-jain people, you can add some potatoes to the boiling stage. They make the dish more filling
On a fasting day, you can enjoy this will a sweet potato curry
At the tempering stage, you can add garlic and your choice of seasoning to make it innovative
